The long and cold winters and mild summers result in a tight-grained wood that affects maturation in two ways: the spirit is able to stay longer in the barrel while more aromatics are released from the wood. After 10 long years, the 92-proof whiskey is left with a beautiful nose of caramel and berries with vanilla and maple on the palate. The finish is rich and oaky with chocolate and pepper.
