    Bruichladdich is an award-winning distillery employing generations of distilling knowledge and the principle of minimal intervention. Built in 1881 on the wild Scottish island of Islay, their distillery still uses the original Victorian equipment to create a range of single malt whiskies that are trickle distilled, matured and bottled solely on Islay by a skilled team of men and women. Bruichladdich implements revolutionary, modern interpretations of time-honored ideas and challenges the comfortable conventions of a whisky establishment.

    Rejecting the onset of modern automation and homogenization, Bruichladdich Head Distiller, Adam Hannett, only considers production methods that place the quality of liquid above everything else. Diversity starts in the field. Provenance is key. They believe the interaction of man, land, soil and climate is paramount. They value their farmer relationships, reconnecting that lost cycle between farmer and distiller — land and spirit.

    The modern Bruichladdich Distillery is known as the most experimental and adventurous of the Scottish distilleries, and the Bruichladdich Octomore Series represents a singularly unique expression in the world of Scotch whisky.

    The Octomore farm is situated on the Rhinns of Islay, a remote area nestled high upon a hill, overlooking the village of Port Charlotte. Octomore harkens to the days of stone cold independence during a time when the legality of distilling had just barely entered the era of “enlightenment.”

    The word Octomore means “the big eighth,” it’s a term derived from the medieval division of common ground. The Original Octomore distillery was founded in 1816 by George Montgomery. The original spirit they produced at Octomore would have been heavily peated, and being distilled on the brine-soaked shores of the Loch Indaal, the whisky would have been sold very young.

    The 49 tons of barley, grown on the Octomore farm, are germinated over a period of three days. Using a Sphagnum-based peat high in incredibly high in phenols, so high in fact, that Octomore 8.3 is one of Bruichladdich’s most heavily peated whiskies, producing a reading of an astronomical 309.1PPM (Phenol Parts per Million), the highest ever recorded at the malting stage.

    The peat used to dry the barley used in Octomore is sourced from a Caithness Croft, situated in the vastness of Northern Scotland also known as “The Flow Country.” An area where peat has been cultivated since the ice age, developing in waterlogged, anaerobic blanket bogs, forming from the partial decomposition of vegetal matter.

    Dried over peat for five days, the malt is then shipped to Islay, where it is ground into grist using a mill made by Robert Boby, installed at the distillery in 1913. The grist is meticulously analyzed before being mashed and fermented in Douglas fir washbacks. The wash is then twice distilled in 17,275 liter steam heated copper distinct from the muc h wider pot stills that are traditionally used to distill heavily peated Islay whiskies. This is the first chapter in the Octomore odyssey to be entirely created by Head Distiller Adam Hannett. Distillation is also overseen by Production Director Allan Logan.

    The only expression of the series to be aged five years instead of eight, Octomore 8.3 is aged in a variety of toasted ex-Bourbon and ex-wine casks crafted from European oak (56% ex-Bourbon American oak; 44% ex-Pauillac, Ventoux, Rhône and Burgundy European oak casks), which impart their own unique characteristics onto the spirit, collectively yielding a nutty, sweet, and floral aromas. Peat takes center stage in this Octomore expression, but this 5YO is also full of dark chocolate, peaches, and cherries. A bold whisky that reminisces back to the early days of the Octomore distillery. Bottled at a staggering 61.2% ABV.

    Toasted oak and peat on the nose with notes of maple syrup, fresh linen, and sea shells, followed by peat moss, and subtle floral notes. Aromas of cherry, peach and mango, are followed by crème brulee and toffee. On the palate there is again a strong sense of bitter peat, with notes of cherry, peach, toasted sweet oak, dark chocolate, and seaweed.     Situated on a ridge above the banks of the River Spey, the Easter Elchies House has been the spiritual home of The Macallan for over three centuries. In 1820, Alexander Reid began renting the home from Sir Lewis Grant of Grant. Reid was a farmer, and soon after he sowed the fields surrounding the home with barley, Reid established the first licensed distillery on the estate, which he named Macallan after an ancient church that had been destroyed by fire during the 15th century. In the winter — when there was little activity on the farm — Reid would ferment and distill his excess grains into whisky, which was often drunk straight from the still or sold to travelers passing through the town.

    Today, the Macallan Estate encompasses 370 acres, 95 of which are devoted to the production of the Macallan Estate’s Minstrel barley (a single acre produces about 2.5 tons of barley each year, enough to yield 1,800 bottles of The Macallan). In addition, the distillery contracts with farmers to purchase barley that is low in nitrogen and high in starch, resulting in a rich and oily whisky.

    After the barley is harvested in late August and early September, it is malted before being mashed in one of The Macallan’s two mash tuns, a process that takes between four and eight hours. Then, the barley is fermented with a specially cultured yeast before being distilled twice through The Macallan’s copper-pot stills. The copper comprising the stills acts as a catalyst, and enhances the formation of sweet esters while minimizing impurities such as sulfur. In addition, the curiously small stills — some of “the smallest stills within the Scotch whisky industry,” according to production manager Alexander Tweedie — produce a whisky with a heavy, oily flavor.

    Following distillation, The Macallan distillers remove the heads and tails of the whisky and collect approximately 16% of the spirit to fill into casks for maturation. This “cut,” which is among the highest of any Scottish distillery, results in a more full-bodied, rich whisky.

    The Macallan has an exquisite Fine Oak Range, a series of whiskies aged in oak barrels with age statements ranging from 10 to 30 years. This 15-year-old whisky undergoes a triple maturation, with two types of wood, American and European ex-sherry and American ex-bourbon barrels.

    In 1815, Donald and Alexander Johnston began leasing nearly 1,000 acres of land on the island of Islay. Their intent was to raise and sell cattle on the land and as a result, they began growing barley to be used as feed for their livestock. Following a particularly bountiful harvest, the brothers distilled the excess grains they had grown into whisky, and sold it to the inhabitants of the island. Soon thereafter, the brothers found it more profitable to distill whisky than to raise cattle, and Laphroaig (pronounced La-froyg) Distillery was born.

    For over a century, the distillery would remain in the hands of one of Johnston’s descendants. In 1954, however, Ian Hunter passed away childless and bequeathed the distillery to Bessie Williamson, a secretary that had been working at the distillery for two decades. Hunter was incredibly protective of the distillery — while he slowly revealed its secrets to Williamson after she had earned his trust, Hunter prevented a cooper who was employed at the distillery from publishing his memoirs because they described the workings of the distillery in too great a detail.

    Laphroaig Single Malt Whisky is one of the most flavorful and intense whiskies made anywhere in the world. During Prohibition, it was one of the few whiskies still legally imported into the United States, as it was considered a medicinal spirit. Laphroaig Single Malt is made from the finest Scottish barley, which is malted at the distillery and smoked over a peat flame. Unlike other distilleries which source peat from the Scottish mainland, the peat used to smoke Laphroaig barley is made from the heather, mosses, and lichens of Islay and adds a distinct iodine-like flavor to the whisky.

    After the barley has been malted and peated, it is fermented before being twice-distilled through Laphroaig’s copper-pot stills. The unique stills have an unusually flat base and flat surfaces, which lends to the overall intensity of the whisky. After the whisky has been distilled, it is aged in seasoned oak barrels, which are re-charred prior to being filled. The re-charring process caramelizes the remaining sugars in the barrel, and adds slightly sweet notes of vanilla and nutty dough t o the whisky.

    Laphroaig 16 gets released on special occasions, starting with their 200th anniversary in 2015. The 2021 edition spent its 16 years in 1st-fill ex-bourbon casks before being bottled at 96 proof. The barrels impart the spirit with a striking bright-gold hue as well as vanilla and spice notes that blend perfectly with Laphroaig’s signature peaty, maritime taste profile.

    About Glenmorangie

    In 1738, a brewery was built upon Morangie Farm in the Highlands region of Scotland. A century later, William Matheson acquired the farm and equipped the Morangie brewery with two stills that he purchased second-hand, and renamed the brewery-converted-distillery Glenmorangie.

    Glenmorangie Single Malt Scotch Whisky is made using malted barley, which is mashed and fermented with water sourced from the Tarlogie Spring. The water produced from the spring, which spends nearly a century underground being filtered through layers of limestone before it is extracted, is unusually rich in minerals. In the 1980s, when development in the area threatened the spring’s water quality, Glenmorangie purchased 600 acres of land around and including the spring in order to ensure consistent water quality and adequate supply.

    After the barley has been fermented, the wash is twice distilled through Glenmorangie’s copper-pot stills by a team of 16 distillers known as the Sixteen Men of Tain. Glenmorangie’s stills are equipped with relatively small boiler pots, which increases the exposure of the whisky to the copper, resulting in a more pure flavor. In addition, the stills are nearly seventeen feet tall — the tallest of any distillery in Scotland — and as a result, produce a lighter, more refined whisky.

    In 1857, Alexander Walker — Johnnie Walker’s eldest son — inherited the store and began improving its selection of single malt Scotch whiskies. Also, Alexander had apprenticed with a tea merchant in Glasgow and there, had learned the art of blending tea. Under his stewardship, the House of Walker began blending whisky and bottling it in an iconic, square bottle adorned with a slanted label. By the time Alexander Walker retired in the 1880s, whisky sales had represented over 95% of the store’s business.

    This Johnnie Walker Blue Label Ghost and Rare is the second edition in this series of special limited edition releases. The blend is comprised of grain whiskies from long defunct “ghost” Scotch whisky distilleries, highlighting one of the most exalted shuttered distilleries on Islay—Port Ellen. The other whiskies in the blend include Caledonian and Carsebridge, harmonizing Port Ellen’s peaty and iodine character. Five additional rare malts (Mortlach, Dailuaine, Cragganmore, Blair Athol, and Oban) are married into the blend yielding a well-rounded mouthfeel and finish. Each of these whiskies are aged at least 20 years. Overseen by Johnnie Walker Master Blender, Dr. Jim Beverage, Port Ellen lies at the heart of this incredible expression, imparting a delicious peatiness and a dose of brine.     About Johnnie Walker

    Johnnie Walker, one of the most widely distributed brands of blended Scotch whisky in the world, originated in the Scottish burgh of Kilmarnock in East Ayrshire. The story of the brand starts with John Walker, who started a profitable groceries business with the inheritance from his father. John Walker, himself a teetotaler, found his competitive edge in whiskies he blended himself, offering his customers a consistent product, unlike most other grocers, who usually sold a line of single malts that were never all that consistent. Whisky represented about eight percent of the sales when John’s son Alexander Walker took over the business after his father’s death in 1857, and when the company was passed on to the third generation, this share was already between 90 and 95 percent. The legalization of the blending of grain and malt whiskies by the Spirits Act of 1860 marked the beginning of the modern blended Scotch whisky. Johnnie Walker’s first commercial blend, called Old Highland Whisky, was launched in 1867. Alexander Wa lker also introduced the brand’s signature square bottle, and the distinctive slanted label. In 1893, the Walkers acquired the Cardhu distillery, and kept expanding through the early 20th century by buying interests in a number of distilleries. This ensured the company a steady supply of whiskies for its blends. By 1909, John’s grandsons George and Alexander II had expanded the line, and sold three blended whiskies.

    In 1909, the company rebranded its whiskies, introducing the famous striding man logo and renaming the blends after the colors of their labels. By 1920, Johnnie Walker could be bought in 120 countries. The company joined Distillers Company in 1925, and, after its acquisition by Guinness, and Guinness’s subsequent merger with Grand Metropolitan, the brand is now owned by Diageo.

Today, the distillery remains a testament to Scottish innovation and heritage.

    Ardbeg Single Malt Scotch Whisky is made from malted barley, which is peated to approximately 50 phenol parts per million. Once the peated barley arrives at the distillery, it is milled and mashed with water sourced from Loch Uigeadail before being fermented in washbacks made of Oregon pine. While wooden washbacks are more expensive and difficult to maintain as compared to stainless steel washbacks, they absorb a portion of the heat generated during the fermentation process and thus, create a lighter and richer whisky. In addition, the wooden washbacks contribute carbolic compounds to the whisky.

    Following fermentation, which lasts for 55 hours, the wash is distilled twice, first through a copper-pot wash still and then again through a copper-pot spirit still. The spirit still is equipped with a purifier, which acts as a small condenser and causes a portion of the evaporating vapors to be pumped back into the pot and then re-distilled. This purification process, which is rare in the industry, results in whisky that has a signature fresh and malty flavor.

    Islay has only 3,000 inhabitants and more than 140 committees, the largest of these being the Ardbeg Committee. With over 120,000 global members, the Ardbeg Committee serves the common purpose of celebrating Ardbeg whisky. Arrrrrrrdbeg! Committee Release 2020 celebrates Mickey Heads’ 13 years of leadership. The expression is bottled at 103.6 proof and was matured entirely in ex-rye casks. It’s brimming with fruity notes.
