The whisky is made exclusively from Scottish barley that is dried directly over a peat flame. Once the grains have been dried, they are milled and mashed with water drawn from Mary’s Well before being fermented for nearly four days in washbacks made of Oregon Pine. Following fermentation, the wash is distilled twice, first through one of Tobermory’s copper-pot wash stills, and again through one of Tobermory’s copper-pot spirit stills.
After distillation, Ledaig Aged 18 Years Single Malt Scotch Whisky is matured in oak barrels for nearly two decades before being finished in Spanish sherry casks, a practice not typically associated with such heavily-peated whiskies. As a result, the whisky has a bold aroma of tobacco smoke, cooked bacon and sherry wine. The palate brightens up with notes of orange zest, along heavier notes of chocolate, anise and cloves, and leads to a finish marked by smoldering coals and dark coffee.

About Ledaig
Situated on the Isle of Mull, the quaint village of Tobermory was founded in 1788 by fishermen who began using it as a resting place during their fishing expeditions in the Sound of Mull. The name Tobermory is derived from the ancient Gaelic word meaning “Mary’s Well,” and refers to a nearby well on the Isle of Mull that was dedicated to the Virgin Mary centuries ago by Irish monks who lived on the island. In 1798 — just ten years after fishermen began using the port of Tobermory as a resting place — John Sinclair founded Tobermory Brewery and Distillery.
Today, Tobermory Distillery is the last remaining distillery on the Isle of Mull, and one of the oldest commercial distilleries in Scotland. It produces two distinctive styles of whisky: Tobermory Single Malt Scotch Whisky, an unpeated single malt whisky that reflects the heritage and culture of the Isle of Mull, and Ledaig Single Malt Scotch Whisky, a heavily peated single malt whisky that reflects the distillery’s location in the Inner Hebrides archipelago.

About The Macallan
Situated on a ridge above the banks of the River Spey, the Easter Elchies House has been the spiritual home of The Macallan for over three centuries. In 1820, Alexander Reid sowed the fields surrounding the rented home with barley and established the first licensed distillery on the estate, which he named Macallan after an ancient church that had been destroyed by fire during the 15th century. In the slow winter days, Reid would ferment and distill his excess grains into whisky, which was often drunk straight from the still or sold to travelers passing through the town.
Today, the Macallan Estate encompasses 370 acres, 95 of which are devoted to the production of the Macallan Estate’s Minstrel barley (a single acre produces about 2.5 tons of barley each year, enough to yield 1,800 bottles of The Macallan). In addition, the distillery contracts with farmers to purchase barley that is low in nitrogen and high in starch, resulting in a rich and oily whisky.
After the harvest, the barley is malted and mashed in one of The Macallan’s two mash tuns, a process that takes between four and eight hours. Then, the barley is fermented with a specially cultured yeast before being distilled twice through The Macallan’s copper-pot stills. The copper comprising the stills acts as a catalyst and enhances the formation of sweet esters while minimizing impurities such as sulfur. In addition, the curiously small stills — some of “the smallest stills within the Scotch whisky industry,” according to production manager Alexander Tweedie — produce a whisky with a heavy, oily flavor. Following distillation, The Macallan distillers remove the he ads and tails of the whisky and collect approximately 16% of the spirit to fill into casks for maturation. This “cut,” which is among the highest of any Scottish distillery, results in a more full-bodied and richer whisky.

About The Glenlivet
During the early 19th century, illegal distilleries were commonplace throughout the Speyside region of Scotland. In 1823, however, Alexander Gordon pushed the Excise Act of 1823 through Parliament. The Excise Act allowed illegal distillers throughout Scotland to apply for and obtain licenses to legally distill spirits. In 1824, a businessman named George Smith applied for one of the first licenses in the Speyside region of Scotland and opened the doors to The Glenlivet Distillery. Oban Single Malt Whisky is made using 100% barley, which is malted to the distillery’s exact specifications. After the barley is malted, it is partially germinated and gently dried over a peat kiln, giving it a slightly smoky, malty flavor profile. The malted barley is then mashed and fermented before being twice-distilled through Oban’s lantern-shaped copper-pot stills. The stills are among the smallest in Scotland, and limit Oban’s production to just 650,000 liters of whisky annually.

About Oban
After moving with their widowed mother to the small port city of Oban (situated in northwest Scotland), John and Hugh Stevenson took jobs building and repairing boats at the city’s boatyard, a trade they had learned from their late father. In the 1790s, the brothers left their boat-making jobs and founded a brewery in the city. In 1794, they converted their brewery into Oban Distillery, one of the oldest and most prestigious distilleries in Scotland.
For nearly a century, Oban Distillery remained in the hands of the Stevenson family. In 1883, however, J. Walter Higgin purchased the distillery and began renovations. While Higgin renovated both the distillery’s equipment and structure, he did so piecemeal in order to ensure that the distillery was able to meet the uninterrupted demand for its whisky. Today, over 100 years later, Oban Distillery remains substantially the same as it was after Higgin’s refurbishment.

Glenfarclas 25 Year Old Single Malt Scotch Whisky is made from freshly harvested barley, which is steeped in water sourced from the heather-clad slopes of the Ben Rinnes mountain. The crystal-clear spring water, which cascades down the 3,000-foot mountain through peat and granite, is the lifeblood of the Glenfarclas Distillery. After the barley is malted, it is milled and mashed before being fermented using 100% cultured distiller’s yeast.
The wash — the liquid that remains after fermentation — is then distilled twice through Glenfarclas’ copper-pot stills. While most distilleries use steam-powered stills as they are more efficient and preserve the lifespan of the still, Glenfarclas Distillery continues to use direct-heated stills in order to preserve the traditional flavors of the whisky. After distillation, the heads and tails of the distillate (the whisky produced at the beginning and end of the distillation process) are discarded and only about 15% of the distillate — the heart of hearts — is preserved for maturation.
Glenfarclas 25 Year Old is the quintessential Speyside sherried single malt scotch. The whisky has a smooth, silky texture, along with a rich aroma of berries, tropical fruits and fruitcake. About Glenfarclas
Situated on the Recherlich Farm in the Speyside region of Scotland, Glenfarclas Distillery was founded in 1836 by Robert Hay, a tenant farmer. In 1865, John Grant purchased the distillery from Hay for £511. Grant was a cattle breeder at the time, and was looking for a staging post between his farm in Glenlivet and the commercial market situated in Elgin.
When Grant passed away in 1889, he left the estate to his son George. George died shortly thereafter and his children, also named George and John Grant, took control of the distillery. After saving the distillery from the brink of bankruptcy, the Grant Brothers modernized and expanded the operations such that in May 1912, a rival distiller wrote: “of all the whiskies, malt is king — of all the kings, Glenfarclas reigns supreme.”
Today, George S. Grant — the great-great-great grandson of a cattle farmer — represents the sixth generation of Grants that own and manage the Glenfarclas Distillery, one of the last remaining independent distilleries in Scotland.

Dalwhinnie 25 Year Old Limited Edition Highland Single Malt Scotch Whisky was distilled in 1987 and matured for a minimum of 25 years in rejuvenated American oak casks. The whisky was bottled at cask strength in 2012. It has a golden amber color, along with an aroma of roasted nuts, cinnamon buns and syrup. The aroma gives way to notes of malted grains, summer fruits (particularly cherries and plums), cocoa and coffee on the palate, and ultimately leads to a finish accented by notes of creamy vanilla, ginger spice and honey.

About Dalwhinnie
Situated along the Grampian Mountains in the Highlands region of Scotland, Dalwhinnie Distillery was founded in 1897 by John Grant, and was originally named Strathspey Distillery. In 1898, Grant declared bankruptcy and sold the distillery to AP Blyth, who renamed the distillery Dalwhinnie. The name, which roughly translates to “meeting place”in ancient Gaelic, is a reference to the cattle farmers who would pause at the distillery on their journey south to the cattle markets in Crieff and Falkirk.
Dalwhinnie Single Malt Scotch Whisky is made exclusively from freshly harvested, plump barley, which is milled and mashed with water sourced from Lochan an Doire Uaine (meaning “Loch of the Green Thicket”). The pure spring water, which travels through local peat before reaching the loch (the loch itself is situated 2,000 feet above sea level), imparts a soft yet subtle complexity to the whisky. Since no other distillery may legally use water drawn from Lochan an Doire Uaine, no other distillery is able to replicate the unique, malty-sweet taste of Dalwhinnie Single Malt Scotch Whisky.

About Lagavulin
Situated on the banks of Lagavulin Bay on the island of Islay, Lagavulin Distillery is one of the oldest distilleries in Scotland. Distilling took place on the banks of Lagavulin Bay as early as 1742, and by the turn of the century, there were as many as ten illicit stills operating in the area. In 1816, John Johnson founded the first legal distillery on the site, and within a year Archibald Campbell had opened a second. After Johnson’s death, Alexander Graham acquired Johnston’s distillery for £1,100 and eventually united the two distilleries together under the Lagavulin name. Since that time, the rich, peaty water that runs down the brown burn and through the Solan Lochs into the hills just next to Lagavulin Bay has served as the lifeblood of the distillery.
Lagavulin is known as one of the most intense, smoky single malt whiskies ever made — the peated barley used to create Lagavulin Single Malt has up to twenty times as much exposure to peat smoke as compared to typical Scotches. Once the grains used to craft Lagavulin Whisky have been harvested and malted, they are dried over a peat and gas fire calibrated specifically to produce Lagavulin’s signature, bold flavor profile. Then, the grains are milled and mashed before being fermented for approximately 72 hours. Following fermentation, the whisky is distilled twice — first through a wash still for approximately five hours and then again through a spirit distill for approximately nine hours. This is the slowe st distillation process of any Islay distillery, giving Lagavulin its characteristic round flavors and mellow edges.

Balblair Single Malt Scotch Whisky is made from plump, ripe Scottish barley, which is malted and fermented using water from the same source the Ross Family began using nearly 225 years ago. Following fermentation, the grains are twice distilled through the Balblair’s copper-pot stills. After distillation, Balblair’s stillmen remove the heads and tails of the distillate and preserve only the “hearts”for maturation (the hearts comprise less than 20% of the entire distillate).
Unlike other Scottish distilleries that bottle their whiskies with an age statement, Balblair Distillery bottles its whisky with a vintage statement. This method of bottling, which emphasizes maturity rather than age, allows Balblair’s Distillery Manager — John MacDonald — to bottle the whisky when it has reached its peak flavor profile. “There’s something quite special about a perfectly matured, Highland single malt whisky,” says MacDonald. “About having the essence of a vintage year, captured in a bottle. About tasting it. About feeling it.”
Balblair 1969 Single Malt Scotch Whisky was distilled in 1969 and aged for 43 years in American ex-bourbon hogshead casks, before being bottled at natural strength in 2012. The 1969 vintage is the oldest in Balblair’s entire U.S. portfolio, and extremely-limited due to the fact that only two casks were used to produce the entire release.

About Balblair
Balblair, founded in 1790 by John Ross, is one of the oldest distilleries in Scotland. The distillery was operated by the Ross family until the late 19th century, when James Ross gave up the tenancy of Balblair to Alexander Cowan, a wine merchant from Inverness. In 1911, Balblair ceased its distilling operations, and in 1932 the last whisky from the era was bottled. In 1948, Balblair resumed production under the stewardship of Robert James “Bertie ” Cumming, a solicitor from Banff, who purchased the distillery for £48,000 a year later. In 1970, he sold the company to Hiram Walker, and throughout the 1980s extensive investments were made in the development of the distillery’s facilities. The Macallan Triple Cask Matured line is a marriage of single malt whiskies that have been married in American sherry-seasoned casks, European sherry-seasoned butts, and American ex-bourbon barrels. They refer to the three elements as “A Trinity of Spirits” and the line — available in three different agings — has become one of The Macallan’s most popular offerings.
The Macallan 18 Year Old Triple Cask Matured sits at the top of the line. An intriguing whisky, it’s aged in a triple-cask combination of European and American sherry seasoned oak casks and American ex-bourbon oak casks. The eighteen years of aging not only develops an exquisite flavor profile, it also adds depth to the velvety character and mouthfeel over complex notes of soft vanilla, cocoa, orange citrus, and wood smoke.

About The Macallan
Situated on a ridge above the banks of the River Spey, the Easter Elchies House has been the spiritual home of The Macallan for over three centuries. In 1820, Alexander Reid sowed the fields surrounding the rented home with barley and established the first licensed distillery on the estate, which he named Macallan after an ancient church that had been destroyed by fire during the 15th century. In the slow winter days, Reid would ferment and distill his excess grains into whisky, which was often drunk straight from the still or sold to travelers passing through the town.
Today, the Macallan Estate encompasses 370 acres, 95 of which are devoted to the production of the Macallan Estate’s Minstrel barley (a single acre produces about 2.5 tons of barley each year, enough to yield 1,800 bottles of The Macallan). In addition, the distillery contracts with farmers to purchase barley that is low in nitrogen and high in starch, resulting in a rich and oily whisky.
After the harvest, the barley is malted and mashed in one of The Macallan’s two mash tuns, a process that takes between four and eight hours. Then, the barley is fermented with a specially cultured yeast before being distilled twice through The Macallan’s copper-pot stills. The copper comprising the stills acts as a catalyst and enhances the formation of sweet esters while minimizing impurities such as sulfur. In addition, the curiously small s tills — some of “the smallest stills within the Scotch whisky industry,” according to production manager Alexander Tweedie — produce a whisky with a heavy, oily flavor. Following distillation, The Macallan distillers remove the heads and tails of the whisky and collect approximately 16% of the spirit to fill into casks for maturation. This “cut,” which is among the highest of any Scottish distillery, results in a more full-bodied and richer whisky.
