The name of the distillery is derived not from the region of Scotland known as The Highlands — the Orkney islands are not a part of The Highlands — but rather from the region known as High Park, where the distillery was founded. Today, over two centuries after its founding, Highland Park Distillery remains one of the few Scottish distilleries that continues to hand-turn, malt, and peat its own barley. “You have to be careful here on the malting floor,” says Eric Tait, Highland Park’s Maltman. “You find it can get a wee bit slippery underneath. I have to turn the malt every eight hours to prevent the roots getting tangled and to get it all aerated properly. The airing also helps it to grow. The malt will be on the floor for seven days and I’m running five floors at the moment.” After malting the barley, Highland Park Distillery smokes it using peat sourced from Hobbister Moor, a peat bog located approximately seven miles from the distillery. Hobbister Moor peat is sourced from floral heather bushes, which burn hotter and cleaner than the grassy peats of Islay. In addition, the peat sourced from Hobbister Moor has greater derivatives of carbohydrates and a lower concentration of lignin than peat from Islay, giving Highland Park’s peat a unique chemical fingerprint. The peat sourced from Hobbister Moor is “absolutely fundamental” in understanding the flavor of Highland Park Whisky, says Russell Anderson, the distillery manager. Together with Orkney’s unique environment (the temperate, moist climate of the archipelago results in an even maturation process), the peat gives Highland Park Whisky its traditional malty, coastal flavors tempered by just a subtle touch of smoke. Highland Park 1968 Year Old Single Malt Scotch Whisky is the second release in the esteemed Orcadian Vintage series. Crafted from just eight hogshead barrels which were previously used for maturing Oloroso Sherry, the whisky was bottled in 2009, allowing four decades of weather on the Orkney Islands to exert its influence over the whisky. Mortlach 70 Year Old Single Malt Scotch Whisky
$8,100.00 Availability: In StockAbout Mortlach 70 Year Old Single Malt Scotch Whisky Situated in the heart of the Speyside region of Scotland, Dufftown is known as the Whisky Capital of the World. The village, which produces more malt whisky than any other town in Scotland, is home to seven distilleries, the oldest of which is Mortlach Distillery. Mortlach Distillery was founded in 1823 by James Findlater, together with his friends Alexander Gordon and James Macintosh. In 1831, however, Findlater sold the distillery to John Robertson for the paltry sum of £270. In 1837, it was sold again to John and James Grant, who dismantled the distilling equipment and shuttered the doors to the distillery. For the next two decades, the building was used first as a brewery, and then, rather curiously, a church. In 1851, however, the distillery began producing whisky once more. Even at the time, it was an impressive distillery, according to the Wine & Spirits Trade Record . The distillery had two still-houses: “In one there are three old-fashioned stills, in the other there are three larger stills, installed in 1897.” The distillery also had “four gigantic malt floors, and the largest mash tun in the district.” In 1964, the distillery was largely rebuilt and today, houses a unique configuration of six stills. The stills — three wash stills and three spirit stills — are each different shapes and sizes (one still is nicknamed “Wee Witchie” because it is shaped like a witch’s cap), and aren’t paired together. This unusual configuration, together with the partial triple distillation method used at Mortlach Distillery, produces a whisky that is full-bodied and meaty. Mortlach 70 Year Old Single Malt Scotch Whisky is part of Gordon & MacPhail’s “Generations” label, and was first put into the cask on October 15, 1938 by John Urquhart, the grandfather of Gordon & MacPhail Joint Managing Directors, David and Michael Urquhart. Matured in a Spanish oak, ex-bodega sherry hogshead cask, the whisky was bottled exactly 70 years later, yielding 54 full-size bottles at cask strength (46.1% ABV). “This is a very special day for us, one we’ve literally been anticipating for generations. $108.00 Availability: In StockAbout Bruichladdich Octomore 07.1 Scottish Barley Single Malt Scotch Whisky Inspired by an entrepreneurial flair and a youthful enthusiasm, the Harvey brothers began construction of the Bruichladdich (pronounced brook-laddie or broo-lah-dee) Distillery in 1881. The brothers were descendants of a dynastic whisky family — their ancestors had already owned distilleries in Scotland for over a century. Today, Bruichladdich Distillery (Bruichladdich means “rocky shore” in ancient Gaelic) remains situated on the shores of Loch Indaal on the island of Islay, and continues to use much of the original equipment installed by the Harvey brothers. The modern Bruichladdich Distillery is known as the most experimental and adventurous of the Scottish distilleries, and the Bruichladdich Octomore Series represents a singularly unique expression in the world of Scotch whisky. Bruichladdich Octomore 7.1 is the distillery’s final release under Master Distiller Jim McEwan’s tenure. The whisky takes its name from Octomore Farm, a farm situated high above the village of Port Charlotte, just two miles away from Bruichladdich Distillery (the farm provides all of the barley used to create the whisky). Harvested from mainland Scotland, the barley used in this release is then malted before being peated to an absurdly high 208 phenol parts per million, making it one of the peatiest whiskies in the world. After the barley has been peated, it is mashed using water drawn from the Bruichladdich loch. The water is soft and devoid of minerality, which makes it ideal for mashing and fermenting the barley. Following fermentation, the wash is twice distilled through Bruichladdich’s 130 year-old, 20-foot tall, diamond-shaped stills. In 1820, Alexander Reid began renting the home from Sir Lewis Grant of Grant. Reid was a farmer, and soon after he sowed the fields surrounding the home with barley, Reid established the first licensed distillery on the estate, which he named Macallan after an ancient church that had been destroyed by fire during the 15th century. In the winter — when there was little activity on the farm — Reid would ferment and distill his excess grains into whisky, which was often drunk straight from the still or sold to travelers passing through the town. Today, the Macallan Estate encompasses 370 acres, 95 of which are devoted to the production of The Macallan Estate’s Minstrel barley (a single acre produces about 2.5 tons of barley each year, enough to yield 1,800 bottles of The Macallan). In addition, the distillery contracts with farmers to purchase barley that is low in nitrogen and high in starch, resulting in a rich and oily whisky. After the barley is harvested in late August and early September, it is malted before being mashed in one of The Macallan’s two mash tuns, a process that takes between four and eight hours. Then, the barley is fermented with a specially cultured yeast before being distilled twice through copper-pot stills. The copper comprising the stills acts as a catalyst, and enhances the formation of sweet esters while minimizing impurities such as sulphur. In addition, the curiously small stills — some of “the smallest stills within the Scotch whisky industry,” according to production manager Alexander Tweedie — produce a whisky with a heavy, oily flavor. Following distillation, The Macallan distillers remove the heads and tails of the whisky and collect approximately 16% of the spirit to fill into casks for maturation. This “cut,” which is among the highest of any Scottish distillery, results in a more full-bodied and and rich whisky. Espolon Extra Anejo Tequila

Then, the heart of the agave — the piña — is removed and cooked for approximately 22 hours (versus the industry average of 12 hours). Once the piña has been cooked, it is shredded and the remaining agave pulp is fermented using a proprietary strain of yeast. During fermentation, Oropeza plays rock music within the distillery to inspire the agave. Then, he twice distills the wash through copper pot stills for approximately 5.5 hours (versus the industry standard of 3.5 hours). After distillation, Espolòn Tequila Extra Añejo was laid to rest in new, American white oak barrels, where Master Distiller Cirilo Oropeza kept a watchful eye on his tequila (and waited patiently). About Gordon & MacPhail Situated in the Speyside region of Scotland, Glenburgie Distillery (pronounced glen-burg-ee) sits just off the main Aberdeen-Inverness road between the burghs of Forres and Elgin. The distillery was founded in 1810 by William Paul, who originally named it Kilnflat. In 1878, however, the distillery changed hands and was renamed Glenburgie. The distillery’s unique location and water source — it is surrounded by temperate and fertile terrain and sources water from local springs on nearby Burghie Hill — contribute to the fruity, floral whisky that Glenburgie produces. In 1935, the distillery was acquired by Hiram Walker; since then, the whisky produced at Glenburgie has been an essential component in Ballantine’s Whisky. As a result, there are few official bottlings of Glenburgie Single Malt Whiskey and the chance to obtain one is exceedingly rare. Founded in 1895, Gordon & MacPhail is a family-owned, independent bottler of Scotch whisky. The facility was originally built as a neutral grain spirit producer for gins. Strathclyde is now Glasgow’s most prosperous distillery. In 1936, Seager Evans moved made the move into the Scotch industry with the purchase of the brand Long John. Strathclyde distillery sits in the Gorbals located in the Lowlands, on the south side of the River Clyde opposite Glasgow Green park. Over the years, Strathclyde underwent numerous ownerships, before ending up within Allied Distillers. By this time Strathclyde had been supplying some of their single grain to big names such as Ballantine’s and Teacher’s. Strathclyde is now part of the Chivas Brothers stable. After Port Dundas shut down in 2009, Strathclyde was the only remaining whisky distillery in Glasgow for several years. Strathclyde sources its water from the Loch Katrine. Their whiskies are distilled through a 2 column system that has an analyzer and rectifier column, the columns once used for neutral production have since been mothballed. The entire grain whisky production at Strathclyde is intended for developing blends, but there have been independent and private bottlings. It’s created by Maestro Mezcalero Don Anastacio who has over 60 years of mezcal-making experience and began learning the art of the craft at a tender age of 12 years from his father. This artisanal mezcal blanco is crafted from agave cupreata that grows wild in the deciduous forests in northern Guerrero. The process begins with fresh local stream water and the agave is crushed by hand, fermented in small oak wooden vats before distillation in copper alembic stills. The result are mellow aromas of mature tropical fruits, orange blossom, and light smoke that develop into rich flavors of bittersweet chocolate and orange peel on the palate.
